Serves 2 2 teasp extra virgin olive oil 2 roma tomatoes, chopped 350 gr or 2 salmon fillets, deboned 2 tbsp capers 2 tbsp black olives 1 teasp Massel Stock Powder Chicken style I bunch baby rocket, leaves torn |
Wash and dry fish fillets. Heat oil in a frypan on high. Add fillets to pan, skin side down. Cook for 2 minutes on med-high or until crispy. Sprinkle fillet with stock powder and turn. Brown other side for 2 minutes. To prepare salsa, place tomatoes in a bowl with rocket, capers and olives. Dress with no fat balsamic dressing. When fillet is cooked, i.e. when the flesh appear opaque/not shiny, remove to plate and top with salsa. Gently pour dressing all around fish.
