Simplest Pumkin Soup

Serves 2

2 teasp parlsey, chopped
1/2 cup low fat evaporated milk
2 Massel Ultracube or 4 Massel 7's, Vegetable Style
1 Kg pumpkin

Cut pumpkin in four pieces. To make peeling easier you can place pumpkin pieces in microwave, cut side up, for approx 4 mins. Let it cool, then peel. Place in soup pot and add water and cubes. Bring to boil and simmer for 10 mins, or until flesh is soft. Puree. Add evaporated light milk or low fat soy milk. Decorate with a tablespoon of cream, evaporated light milk or low fat soy milk, chopped parsley and freshly ground black pepper.

Low fat, low salt, low sugar, microwaveable, no diary, no eggs, no gluten, vegan
