Salade Nicoise

Serves 2

2tbsp extra vigin olive oil
2 tbsp water
1 teasp Massel Vegetable Style Stock Powder
4 tbsp red wine vinegar
2 tomatoes, cut in wedges
1 x 250 gr can tuna
2 eggs, hardboiled
4 anchovy fillets
4 lettuce leaves
2 cups green beans, cooked
2 potatoes, cooked and cut into wedges
2 teasp capers (optional)
Black olives

Layer all the ingredients starting with lettuce leaves, the tuna (flaked), potato wedges and finishing with egg and anchovy fillets. In a screw top jar place stock powder, vinegar, water and oil. Shake well. Drizzle over salad. N.B. You can subsitute with No-Fat dressing if desired.
