Serves 6 people Pancakes see recipe in 'Eggs' section Mayonnaise - see recipe in 'Other' section 100 gr Cold meats of your choice (ham, salame, etc) 2 or 3 lettuce leaves, washed and dried 1 hard boiled egg, sliced 20 gr Rocket lettuce 1 tomato, washed and sliced 20 gr gerkins in vinegar |
Place the first pancake (see thin pancake recipe in 'Eggs' Section)) on serving platter and spread on it a small amount of mayonnaise (see recipe in 'Other' Section).
Top with a layer of cold meat, cover with another pancake.
Spread it with mayonnaise.
Top with lettuce leaves, sprinkle them with a pinch of stock powder.
Add another pancake spread with mayonnaise.
Top it with had-boiled egg slices, sprinkle with another pinch of stock powder.
Continue to layer until you've run out of ingredients: pancake spread with mayonnaise then the sun dried tomatoes and rocket, pancake spread with mayo, cold meat and gherkins.
Finish with a pancake and artistically decorate the top with mayonnaise, tomatoes, gherkins, lettuce or rocket leaves or whatever other ingredients takes your fancy.
Cut into thin wedges and refrigerate until serving time.
TIPS:
1) You can prepare the pancakes ahead of time and freeze them. They keep very well for up to a month.
2) You can also prepare ahead the mayonnaise. Store in the fridge, well covered. If you intend not to use it for more than a week cover the top with a thin layer of olive oil, that you will remove with absorbent paper before usage.
