Spinach and Ricotta Spreads

Serves 6

2 x Massel 7's Vegetable Style cubes
250 gr. chopped frozen spinach
350 gr fresh low fat ricotta
2 tbsp of milk

Microwave spinach in their box, on high for 4 minutes. Then saute' them in a small non-stick frypan with no oil. Add 2 cubes of the 7's, stirring well until cubes aredissolved. Let cool to warm. In a rather deep bowl place the ricotta, add the warm spinach, mixing very thoroughly. With the milk wet a muffin tray or a cake mould. Scoop the spinach mixture into each muffin space or in the cake mould, pressing well to avoid formation of bubbles. Cover with film and refrigerate until serving time.
