Quick Low Fat Russian Salad

Serves 2

1 teasp Massel Stock Powder, Vegetable
3 cups frozen mixed vegetables (carrot, peas, corn)
1 large potato, cubed
1/4 cup egg mayonnaise
1 egg, hardboiled and sliced
Beetroot, basil, parsley, snow peas or olives for decoration
2 tbsp small capers
3 gherkins (in vinegar) chopped

Steam or microwave frozen mixed vegetables. Spread them out to cool. Steam or microwave fresh vegetables. Spread them out to cool. In a large bowl, delicately mix vegetables, stock powder, gherkins and capers, drizzling them with Massel's 'No Fat Mustard Dressing' (located in 'Other'section in recipe menu). Gently press down the vegies with a spatular or spoon to make the surface even. Cover surface with a thick layer of low fat, unsweetened mayonnaise. Decorate with hard boiled egg slices, canned beetroot slices cut into fancy shapes, basil or parsley leaves, cherry tomatoes, snow peas or any vegie to your liking. (in picture we have used eggs and kalamata olives)

This is a good party dish as it can be prepared ahead of time and served as a salad to go with your main, or on Melba toast as finger food.
