Quick Snacks to Whip Up for the Week

Everyone loves to snack, but we often resort to unhealthy food choices when we feel hunger pangs coming on! With fast food on every street corner, it can be hard to make the decision to not resort to eating something unhealthy when you are short on time, especially when you want something delicious to eat but just don’t have the time (and often the energy!) to make it.

That’s why we’ve compiled a couple of our favourite quick recipes to help you snack the right way this autumn. For all you busy people out there who need a couple of quick-fixes to take the edge off your appetite, we’ve got you covered.


Asian Style Meatballs


You can never go wrong with meatballs! Easy as a snack on their own or as part of a buffet, why not double the portion you make so that you have more to put in the freezer later on?



  • 1 Massel Vegetable Ultracube or 1½ teaspoon stock powder
  • 250g ground pork
  • 2 shallots, finely chopped
  • 1 teaspoon (5ml) finely grated ginger
  • 2 garlic cloves, minced
  • Ground pepper, to taste.


  1. Preheat oven 175C/350F
  2. Combine ground pork, shallots, ginger, garlic and Massel stock powder or an Ultracube (squish Ultracube before mixing into the meat). Add ground pepper.
  3. Shape meat balls and place on baking sheet.
  4. Bake meatballs for approximately 15-20 minutes or until golden brown and cooked through.
  5. Serve up with toothpicks and sauce of choice. Options: sweet chilli, sriracha, and spicy peanut sauce.


Chicken and Broccoli Stir-Fry

This one is kid-friendly and so quick and easy to whip up when you’re hungry after work! Toss some broccoli into the mix, and prepare for a healthy, gluten-free and low-carbohydrate meal that the family will love.



1. Add the juice of ½ lemon and freshly ground black pepper to Massel concentrate

2. Toss chicken slices in it and marinate for about 20 minutes.

3. Take 500ml of water to the boil. Add broccoli florets and steam for 2-3 minutes.

4. Remove to a plate and sprinkle with Massel Vegetable Stock Powder.

5. Stir-fry chicken slices on hot non-stick pan

6. Prepare Massel Gravy according to the instructions using the water you boiled the broccoli florets in instead of just water. Add to cooked chicken.

7. At the centre of serving plate place chicken in its sauce, surrounded by the broccoli.


Lemon Chicken Soup

Lemon chicken soup

An easy weekday family favourite, this soup is so simple to prepare and tastes like it has been simmering for hours.



  • 1 litre water
  • 4 Massel 7’s Chicken Style stock cubes (Or 2 Ultracubes or 4 teaspoons of stock powder)
  • 2 chicken breasts, cooked and shredded
  • 65g carrots, shredded or thinly sliced
  • 75g onion, finely chopped
  • 35g celery, finely chopped
  • 2 garlic cloves, finely chopped
  • 2 tablespoons (40ml) fresh parsley, chopped
  • Juice of 1 lemon
  • Lots of cracked pepper
  • Massel Stock Powder, to taste
  • Optional: Cooked rice or rice noodles


  1. In a medium sauce pan, add all the ingredients through to lemon. Simmer about 10-15 minutes until all the ingredients are cooked.
  2. Taste and season to your satisfaction. I find that I do not need to add salt, but if you feel the need try adding Massel Stock Powder instead.
  3. Add noodles or rice if you so desire. Heat through.
  4. Serve up a soothing bowl of comfort.


Handy Hint: For a vegan/vegetarian version: substitute chicken with cubed tofu.
