Healthy Dinner Recipes for Summer Serving

Spinach Dip

Healthy Dinner Recipes: Spinach Dip Recipe from Massel Australia


  • 225g cream cheese
  • 225g sour cream
  • 1-1½ T Massel Vegetable Stock Powder
  • 150g package frozen chopped spinach (thawed and drained)
  • 150g red capsicums, finely chopped


  1. Mix Massel Vegetable Stock Powder, cream cheese and sour cream until blended.
  2. Stir in the remaining ingredients.
  3. Refrigerate your spinach dip for several hours or until chilled. Enjoy!

Bloody Mary

  • 1 L tomato juice
  • 1 T Massel Beef style stock powder
  • 2 t grated horseradish
  • Juice of 1 lemon
  • ½ t Worcestershire sauce
  • 1½ t. Massel Vegetable Stock Powder
  • 2 t freshly ground black pepper
  • 8 dashes hot sauce
  • 1 ½ cup vodka


  1. Mix all ingredients in pitcher then serve each Bloody Mary over ice. Delicious.

Baked Tomatoes

Healthy Dinner Recipes: Baked Tomatoes: Massel Australia Recipe


  • 1t Massel Vegetable Stock Powder
  • 1T parsley, chopped
  • 1 clove garlic
  • 4T breadcrumbs
  • 6T water
  • 1t sugar
  • 2 Roma tomatoes


  1. Preheat oven to 180C
  2. Holding the halved tomato, squeeze out the seeds. Place it, cut side down on inclined cutting board to shed as much vegetable water as possible.
  3. Combine breadcrumbs, half the bouillon granules, parsley and garlic.
  4. Place the tomatoes, cut side up in a non-stick over proof container. Sprinkle the inside of each with a tiny dash of sugar. Make some Massel stock dissolving the other half of the Massel stock in 3 tablespoons of water.
  5. Fill each tomato with the breadcrumb mix. Pour 1 tablespoon of the stock gently onto each filled tomato. Then pour remaining stock into the bottom of the container.
  6. Bake 30 mins until the liquid has evaporated and the topping appears golden.


Zucchini & Goat Cheese Salad

  • 2 or 3 medium sized zucchini
  • Crumbled goat cheese to taste
  • 1 teaspoon Massel Vegetable Stock Powder
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey


  1. Slice your zucchini into thin ribbons with the peeler.
  2. Crumble the goat cheese over your zucchini to taste.
  3. Make the dressing by placing in a jar 1 teaspoon of Massel Vegetable Stock Powder, the lemon juice, the remaining 2 tablespoons of olive oil and the honey. Close the jar and shake well.
  4. Dress your salad. If you like your salad with extra lemon use your zester to add some fine strips of lemon peel.


Beef or Pork in Balsamic Marinade

Healthy Dinner Recipes: Beef or Pork Balsamic Marinade Recipe - Massel Australia


  • 1kg beef skirt steak or flank steak or pork tenderloin
  • 1 cup Balsamic vinegar
  • ½ cup olive oil
  • 2 tablespoons light brown sugar
  • 2 tablespoons of Massel Beef Style Concentrate
  • 2 sprigs rosemary
  • Freshly ground pepper


  1. Mix all ingredients in a large re-sealable bag.
  2. Marinate in refrigerator overnight.
  3. Remove from fridge 30 minutes prior to cooking.
  4. Grill for 2 to 4 minutes per side for medium rare, 4 to 6 minutes per side for medium.
  5. Remove from heat and let rest for 5 minutes before slicing.
