Angel Hair Artichoke Pasta recipe, a quick healthy dinner idea from Massel

Recipes: Angel Hair Artichoke Pasta (Serves: 4)

This easy well balanced gluten-free recipe is loaded with flavour. We experimented with some different olives and loved it with the kalamata olives best. For a tasty variation, you can crumble feta cheese over the top. The leftovers are perfect tossed with beaten eggs to make a frittata. Remember to put a little pinch of Massel stock in your eggs when you beat them.

The Recipe

Ingredients

  • 250g Brown Rice Angel Hair Pasta
  • 250g artichoke heart, frozen
  • 90g (1/2 cup) black olives, sliced
  • 30g sun dried tomatoes – slices soaked and diced
  • 2 garlic cloves diced
  • 1 tablespoon (20ml) extra virgin olive oil
  • 1 teaspoon (5ml) Massel Chicken Style stock powder
  • 1 1/2 tablespoons (30ml) olive oil
  • 3 tablespoons (60ml) rice vinegar
  • 1/2 teaspoon (2.5ml) kosher salt
  • 1/2 teaspoon (2.5ml) powdered sumac
  • 1/2 teaspoon (2.5ml) Aleppo pepper (or chilli flakes)

Method

  1. Cook frozen artichokes as the package directs.
  2. Soak the dried tomato slices in fresh water until they soften, then chop finely. Reserve half a cup of the soaking water.
  3. While the artichokes are cooking, whisk together rice vinegar, olive oil, salt and sumac in a medium bowl.
  4. Drain artichokes and mix into the dressing. Leave to marinate.
  5. Start a pot of water for the pasta.
  6. Heat a large sauté pan.
  7. Start boiling the pasta
  8. Add extra virgin olive oil to sauté pan.
  9. Add garlic and stir for about 30 seconds.
  10. Add sun dried tomato pieces and stir to coat
  11. Remove from heat until the pasta is done.
  12. Drain pasta, reserving half a cup of the cooking water and half a cup of the tomato soaking water.
  13. Put sauté pan back on heat, add pasta water and bring to a boil.
  14. Add Massel stock powder, black olives and drained artichokes
  15. Add pasta and stir in well. Cook about a minute until everything is warm and the pasta absorbs the liquid. Serve immediately.
