Recipes: Creamy Broccoli & Pasta (Serves: 2)

This is the dish that will make your kids love broccoli. The flavourful cheese and cream sauce can convert anyone. Use your favourite type of pasta. If gluten-free, use your favourite rice pasta.

The Recipe

Ingredients

  • 125g dry pasta
  • 2 teaspoons Massel Vegetable stock powder
  • 2 tablespoons Extra Virgin Olive Oil
  • 2-3 tablespoons grated Parmesan cheese
  • 1 shallot, finely chopped
  • 1 cup broccoli florets
  • 2 tablespoons cream
  • Freshly ground black pepper, to taste

Method

  1. Add pasta to a large pot of rapidly boiling, salted water. Cook according to box directions.
  2. While pasta is cooking, heat oil in large frying pan.
  3. Add shallots and minced garlic. Sauté for one minute or so.
  4. Add broccoli. Sprinkle with Massel stock powder and sauté for about a minute more.
  5. At this stage your pasta must be ready. Drain and add pasta to sauce. Mix in well.
  6. Add cream and parmesan cheese, coating pasta thoroughly.
  7. Add some of the pasta water if you need a little more sauce.
  8. Add freshly ground black pepper to taste.
  9. Serve with shaved parmesan cheese on top, if desired.
