Recipes: Kale and Carrot Salad with Honey Lemon Dressing (Serves: 2-4)

This salad can be served both cold and warm. The hearty kale and sweet carrots make this recipe a tasty snack or side dish. Serve up a big bowl and have it to snack on instead of reaching for another unhealthy option. This is perfect to have around during the holidays. Simple prep, taste explosion, and easy on your waistline, you will find nothing wrong with this salad.

The Recipe

Ingredients

  • Kale, chopped (if using collard greens, boil in hot water until cooked. Drain and chill.)
  • Carrots, grated
  • 1 tablespoon honey
  • 1 tablespoon Massel vegetable stock powder or concentrate
  • 1 lemon, juice of
  • 2-3 tablespoons grape seed oil or another light tasting oil
  • a few drops of sesame oil

Method

Honey Lemon Dressing

  1. Whisk together or put in jar with lid and shake.
  2. Easy to double or triple this recipe. Keeps well in fridge.

Kale and Carrots

  1. Equal amount of chopped kale and grated carrots. Make as little or as much as you want.
  2. Toss with dressing and chill.
