Massel Australia Tomato Bruschetta Recipe

Recipes: Massel Tomato Bruschetta (Serves: Enough for 6 slices of bread)

When in doubt on what to serve, serve Bruschetta! This works as a snack, a first course or just because it is so good! If you are a garlic lover, you can just finely chop the garlic and mix it into the tomato mixture

The Recipe


  • 1 teaspoon Massel Vegetable Stock Powder
  • 1 large garlic clove, peeled
  • 2 large tomatoes
  • 6 bread slices
  • 3-4 tablespoons extra virgin olive oil
  • 2 tablespoons fresh basil, chopped
  • Freshly ground black pepper


  1. Cube tomato and place in a bowl.
  2. Finely chop basil, add to tomato.
  3. Add the Massel Stock Powder to the tomato and basil, and stir.
  4. Dress with olive oil and freshly milled black pepper.
  5. Let rest for the flavours to marinate, but no more than 3 or 4 hours.
  6. Close to serving time, toast 6 bread slices of crusty bread to a crisp.
  7. Take the garlic clove and rub it onto the toasted bread slices.
  8. Place them on the serving platter.
  9. Divide tomato mixture on top of each crisp bread slice.
  10. Serve up and see them get devoured.

Handy Tip

Gluten-free option: Instead of a traditional hearty Italian bread, use your favourite gluten-free bread that toasts up well.
